This outstanding meal consists of a chile Poblano stuffed with dried fruit and meat, and covered with a flavourful walnut sauce, pomegranate seeds, and a little bit of parsley. The ingredients represent the colors of the Mexican flag and the plate commemorates the Mexican Independence. Chile en nogada is definitely not for everyone, but if you're someone who enjoys mixing sweet and salty (unusual) flavors you have to try this one. It was believed that this meal was created in 1685 by a nun but it was found that mole, in its original form, existed since pre-Hispanic cultures, but when the Spaniards arrived, a fusion of cultures took place and new ingredients were integrated into the dish. The original mole, mole Poblano is made from different chiles, spices, and ingredients that form a dense brown sauce with a truly distinctive flavor. Later some other states created their own version of mole so you can also find Mole Oaxaqueño and Mole Coloradito. This is another meal that only some people like due to its sweet but salty flavor and dense consistency.

Meat lovers are bound to love this one. Barbacoa is traditionally lamb or goat meat slowly cooked for several hours in a dug pit topped with maguey leaves.
